So it happened again. I started another project, only to discover half way through, that I don't have
enough flour to finish the recipe! I don't want to run to the store, and I have multiple specialty flours...surely I can use something as a substitution? After all, flour is flour, right?

Sadly, no - each flour has specific purposes. However, if you know the differences between them, you can easily discover a remedy that will work for your specific needs. Over the next few months, we will be reviewing the differences between many kinds of flours, as well as substitution options that are available.
